When PepsiCo’s Director of Marketing learned about Inedit, a beer specifically formulated, under the direction of superstar chef Ferran Adrià, to be paired with food, he had an idea. And that’s when they called me. What if, he asked, we could come up with a food specifically formulated to be paired with a PepsiCo product, say, Diet Mountain Dew? Well, I don’t back down from a challenge - unless it seems particularly difficult or might disturb my hair - so I jumped on board. After minutes of grueling research and development (something in the industry they simply refer to as R&D), I arrived at this result: redfish stuffed with cornbread, then wrapped in bacon, served over creamed corn studded with roasted poblanos. Sadly, I ran out of Diet Mountain Dew before I was able to try the finished product, but I’m sure it’s a match.
