I get hundreds of emails and snail mails from my readers every day, and I try to respond to each one personally, although sometimes I’ll use a mail answering algorithm if I’m too busy. Today, for instance, Katie T. from Little Rock writes, “Dear Chef, I am a teenager and someday hope to be like a sous chef or something. What was your sous chef, Ted, like as a teenager?” Well, Katie T., I happen to have a photo. I’m sure he was very much like you.
